Authentic Azerbaijani cuisine - far from your typical kebob restaurant -video


The Caucasus mountain range north of Azerbaijan was the inspiration for the restaurant name Kavkaz, Kavkaz Kebab. Azerbaijan has had a tumultuous history, other countries ruling it only recently to become independent of Russia, who ruled from 1920 to 1991. The bordering countries to Azerbaijan have influenced their cuisine reflecting flavors from Iran, Georgia, Turkey and Russia. Rather than what one might consider Russian influenced foods of beets, herring and smoked fish the flavors are more Middle Eastern. Don’t let the kebab name predetermine what you believe the food will be like, I did, and I was wrong.
